Our "Gournay" is a fresh cheese made in a similar fashion to our fresh chevre-long and slow fermentation. We use Jersey cow milk from Kilgus Farmstead in Fairbury, IL. The texture and mouth feel are very similar to cream cheese. It is a mild rich cheese that can subsitute for cream cheese. We are offering it as 6 oz. containers-plain, "garlic & herb" (similar to "Boursin"), "everything bagel" seasoning and spiced cranberry.  Shelf life is about 5 weeks.
