Our "mini" brie or crottin style bloomy, this little disc weighs approx. 0.25# or 4 oz.. It is approximately 2" tall and 1" diameter round. The cheese stays firm in the center even as it ages. Penicillium candidum (white mold) rind gives it a mushroom flavor. Available as mixed milk (cow-goat).  We use pastured jersey cow milk from Kilgus Farmstead in Fairbury.
