Discover the rich traditions of Oaxacan cuisine in this immersive, hands-on Tortilla Making Class with Chef Ernesto of El Molcajete Sauces. More than just a cooking class, this experience celebrates one of Mexico's most iconic foods while exploring the history, culture, and craftsmanship behind authentic handmade tortillas.
Using a variety of heirloom corn masas, each with its own distinctive flavor, color, and texture, you'll learn to make tortillas completely from scratch while gaining a deeper appreciation for the role corn plays in Mexican culinary traditions. Throughout the evening, enjoy a delicious Oaxacan-inspired meal, sample a selection of Chef Ernesto's handcrafted mole sauces, and sip handcrafted mezcal margaritas as you cook.
What You'll Do
Chef Ernesto will guide you through every step of creating authentic corn tortillas by hand. You'll learn about different heirloom corn varieties, practice shaping tortillas using traditional techniques, and cook them on a hot comal to achieve the perfect texture and flavor.
As you cook, Chef Ernesto will share stories from his home state of Oaxaca, offering insight into the cultural significance of tortillas and the regional traditions that have been passed down for generations.
After preparing your tortillas, you'll enjoy them alongside a flavorful meal featuring tender beef short ribs in rich mole negro, rice and beans, and a tasting of several of Chef Ernesto's signature mole sauces. The evening also includes three handcrafted mezcal margaritas per guest to complement the meal.
