This is a fresh cheese that has elements of both fresh chevre and cottage cheese. Made with 100% jersey cow milk from Kilgus Farmstead, the texture is drier than American cottage cheese with a nice tang. Traditionally eaten with sweet things like jam, honey or fruit, but can be used in savory applications too.
