Bringing cheese to market

The albeit mild winter isn't slowing us down in the creamery. We are making the most of our weekly cow milk deliveries from Kilgus Farmstead. So, we've decided to maximize the sharing opportunities for all this cheesy goodness. We'll be attending the Winter Farmers' Market this Saturday, February 18th inside Lincoln Square Mall (8 am-12 noon


Here's the cheese lineup:

  • Fresh chevre: plain, herbs de Provence, cracked pepper

  • Seasonal chevre flavor: everything bagel seasoning (white & black sesame seeds, poppy seeds, flaked garlic, flake sea salt)

  • "Passion Fruits" cow milk bloomy rind beauties stuffed with either golden raisin-dried pear OR dried fig-- these are absolutely breathtaking and crazy delicious

  • Angel Food mini brie (all cow)--we're running a special on these! The more you buy, the better the price per piece!

  • Little bloom on the prairie: all cow milk camembert style

  • Feta in whey brine (all cow milk; creamier and more buttery than mixed milk versions)

  • Ukrainian Farmhouse Cheese: all cow milk-like a cottage cheese-fromage blanc hybrid

  • Fresh mozzarella: perfect for a winter salad or homemade pizza!

  • Halloumi-Grilling Cheese--yes, you could attempt outdoor grilling OR pan frying--so yummy with olive oil, fresh lemon juice and fresh herbs

  • Moonglo: our raw goat milk tomme-style cheese; sharp, nutty with notes of tropical fruits; slice it, melt in on some crusty bread

  • Pelota Roja: raw goat milk, spanish style hard cheese, guajillo chile powder-olive oil rub; served in Chef Rick Bayless' restaurants in Chicago
