About Your Instructor
Rachel Mannen is a Nutrition and Wellness Educator with Illinois Extension serving Champaign, Ford, Iroquois, and Vermilion Counties. As a Registered Dietitian Nutritionist with bachelor's and master's degrees in Nutrition and Dietetics from Eastern Illinois University, Rachel brings research-based expertise to accessible community education.
Previously a WIC nutritionist with the Champaign-Urbana Public Health District, Rachel is passionate about making healthy cooking practical and achievable. She specializes in child nutrition, chronic disease prevention, food safety, and healthy cooking demonstrations. A member of the Academy of Nutrition and Dietetics and the Illinois Academy of Nutrition and Dietetics, Rachel focuses on empowering individuals and families to make informed choices that enhance their well-being.
