Our feta is made with pasteurized milk and aged in pasteurized whey brine for one to two months. The whey brine imparts a more complex flavor to the cheese. The flavor is tangy and sharp, while the consistency is a combination creamy-crumbly. Priced by the block piece (approx. 1/3 pound), but the weight of the whey-brine is not  included in the price. Available as mixed milk from April-December (all cow milk from January-March). We use seasonally grassfed Jersey cow's milk from Kilgus Farmstead in Fairbury IL.
