Our cow-goat milk feta is made with pasteurized milk and aged in pasteurized whey brine for one to two months. The whey brine imparts a more complex flavor to the cheese. The flavor is tangy and sharp, while the consistency is a combination creamy-crumbly. Priced by the block piece (approx. 1/3 pound), but the weight of the whey-brine is not charged. NOTE: We have switched to a mixed milk version of our all -goat milk feta during late fall, when our goat milk production is low.
