Black goat, our ash-ripened goat milk bloomy took a Silver Medal in the inaugural 2021 New York International Cheese Competition, and we're so proud. This earthy little goat round, starts out firm with a fudgy paste. As it ages, it becomes gooey and funky (in a good way). Pairs well with local honey or dry-cured salami and a glass of medium bodied red wine.
